In planning for next year's garden, I am wondering about vegetables that give you the "biggest bang for your buck" regarding space. I have limited space and I want to maximize caloric and nutrition output. I know it's a loaded question because everyone has their opinion. Is there some science/research directed at small spaces? (20'x10') I've heard of Kale (never tried growing) but I am willing to experiment with anything. We tried haybale gardening this year with some success and some disappointments. It was fun.

Hi,

As a horticulturist I can only say that I have been told that greens such as kale, mustard, collards, spinach, chard etc are very beneficial when added to ones diet. I would be checking with a nutritionist for what type of benefit though. As far as growing any of these crops can be provide maximum return and are easily grown in small space gardens Many are good fall and spring crops with a few such as mustard, chard, collards good for summer growing.
