Clinton County Home Community and Education Association hosted a professional chef, Randy Eckstein to give a lesson on spices. Chef Eckstein gave the participants an opportunity to test their pallet and identify spices in three different blind tests. Each spice was simmered and strained in a chicken broth to emphasize the change it made to the broth and discuss its further uses in cooking. Chef Eckstein highlighted information on 42 spices. Attendees received a handout to take this lesson and continue learning in their own kitchens. They learned about the usual combinations of spices paired in conjunction with a variety of cooked foods. The lesson also included some of the health benefits of the spices. Handouts included: Dietary Wellness, by Phyllis and James Balch and Better Homes and Gardens New Cookbook.
