Ashley Hoffman is the SNAP-Ed Educator for the University of Illinois Extension, serving communities in Bond, Clinton, Jefferson, Marion, and Washington counties. In this position, Ashley provides evidenced-based professional training and technical assistance in agencies and organizations that serve limited resource families, such as schools, early childhood centers and food pantries.
Ashley obtained her Bachelor of Science degree in Human Nutrition and Dietetics and her Master of Science degree in Food and Nutrition from Southern Illinois University Carbondale. Ashley and her husband are lifelong residents of Jefferson County and they have two very active boys. In her earlier years, Ashley enjoyed being a member of the Texico Stars 4-H Club.
Ashley has previously worked in the clinical setting educating patients on healthy diets, disease prevention and management and giving community presentations on healthy eating. As a graduate assistant, she taught undergraduate students in food and cooking labs. Ashley is very active in the community, serving on the Board of Directors of the United Way of South Central Illinois and as an administrative counselor for Cedarhurst Center for the Arts. She also serves on her church’s council and has served on the local Court Appointed Special Advocates (CASA) board.
Ashley has a strong passion for improving the lives of people who live in and around her community. Her goal is to help promote and increase food access to limited resource families and to help children and adults make better food choices.
