Veronica Skaradzinski is a SNAP-Ed Extension Educator through the Illinois Nutrition Education Programs (INEP) for the counties of Boone, Carroll, DeKalb, Lee, Ogle, and Whiteside. SNAP-Ed evidenced-based programs focus on nutrition education and obesity prevention through promoting behavior change. In her role, Veronica provides professional development opportunities and assistances with systematic or environmental changes to locations who primarily serve students from low-income families or Supplemental Nutrition Assistance Program (SNAP) participants. She works with schools, food pantries, community agencies, youth programs, grocery stores, and faith-based institutions to implement simple changes that make the healthy choice the easy choice.
Skaradzinski has a Bachelor of Science degree in Food, Nutrition and Dietetics from Illinois State University, and a minor in environmental health. Veronica earned a Master of Science degree in Nutrition and Dietetics from Northern Illinois University, and simultaneously completed her dietetic internship. Veronica is a registered dietitian nutritionist and licensed dietitian nutritionist for the state of Illinois. She is an active member of the Academy of Nutrition and Dietetics, Illinois Academy of Nutrition and Dietetics, and Mississippi Valley Academy of Nutrition and Dietetics.
Veronica has a passion for helping others succeed in making healthful changes. She believes small changes can make big differences over time and that healthy eating can fit any lifestyle. Skaradzinski’s expertise includes nutrition, retail nutrition, Smarter Lunchroom, food safety, food insecurity.
