Comfort Food Makeover Class Coming to Taylorville

Who says comfort food has to be unhealthy? Come learn about taking your favorite dishes and shedding some of that excess fat, sugar, and salt. Start preparing for the holidays, by impressing family and friends with delicious meals without the guilt. Receive a recipe packet, do some taste testing, and learn the art of altering recipes. 

This program will be held at the Christian County Extension Office in Taylorville, IL on October 11th from 1:30pm-2:30pm. There is no cost for this program.

Sweet Potato Casserole

Yield: 6 servings

 

4 medium sweet potatoes, peeled,                             1 teaspoon vanilla

   cooked (about 1 ½ pounds)                                     1 teaspoon ground cinnamon

¾ cup Splenda™ or sugar substitute                          ½ teaspoon ground nutmeg

    equal to ¾ cup sugar                                              ¼ cup chopped pecans, toasted

½ to 1 cup reduced fat sour cream

 

1.     Mash sweet potatoes with potato masher or beat with electric mixer until smooth. Mix in remaining ingredients, except pecans. Spoon sweet potato mixture into ungreased 1 quart casserole or soufflé dish; sprinkle with pecans.

2.     Bake uncovered at 350°F until heated throughout, about 30 minutes.

 

Nutritional Facts per serving:  150 calories, 3g protein, 23g carbohydrate, 3g fiber, 5g fat, 5mg cholesterol, 60mg sodium
