Katie Paulek Joins Christian County Extension Staff

Amanda Cole, Unit 18 County Extension Director, is pleased to announce that Katie Paulek has joined the University of Illinois Christian County Extension staff. Paulek will be assisting with Nutrition and Wellness programing in Christian County. One of the first projects Paulek will be working with is a local foods initiative that Extension is planning for 2017. She is currently gathering a list of local producers to be compiled into an informational resource for the public.
Paulek was raised on her family’s farm in Blue Mound, IL where they grew corn and soybeans. She graduated from Meridian High School and then attended Illinois State, where she earned a Bachelor’s degree in Agriculture Business. After college, she worked at Tate & Lyle until her second child was born.
Prior to taking this position with Extension, Paulek put her career on hold in order to focus on raising her children. However, during those years she remained busy on the farm, as well as with school and church activities. She and her husband still farm with her family farmstead and raise Boer Goats. Paulek currently resides north of Stonington with her husband Craig and three sons Cole, Waylon, and Levi. She is very active with the Taylorville United Methodist Church, Old Stonington 4-H Club and Stonington PTA.
