Recipe of the Month
Banana Snack Cake
(9 Servings)
Ingredients: 3/4 cup whole-wheat flour 3/4 cup all-purpose flour 1/2 cup sugar 1 teaspoon baking powder 1/2 teaspoon baking soda and ground nutmeg 1 teaspoon ground cinnamon 1/4 teaspoon salt and ground cloves 1 cup ripe bananas, mashed 1/4 cup plain, low fat yogurt 1/4 cup oil 1 egg, slightly beaten 1 teaspoon vanilla
Instructions: 1. Preheat oven to 350 degrees. 2. Lightly grease 9 by 9 inch baking pan. 3. Mix dry ingredients thoroughly. 4. Mix remaining ingredients and add to dry ingredients. 5. Stir until dry ingredients are barely moistened. 6. Pour into baking pan. 7. Bake 20 minutes or until toothpick inserted in center comes out clean.
