| 1 can (16oz) black beans, rinsed, drained. |
| 1 can (16oz) mandarin oranges in light syrup/juice, drained |
| 2 cups cooked rice |
| 3 Tbsps. nonfat Italian salad dressing |
- Instructions:
- Combine all ingredients.
- Refrigerate to chill well.
- Serve over lettuce.
