Turkey Vegetable Bake

Servings: 4
Ingredients:
2 Tbsp. butter
2 Tbsp. all-purpose flour
1 cup low-sodium chicken broth
1 can (16oz.) mixed vegetables, drained
2 cups cooked turkey (¾ lb.)
½ cup shredded low fat American cheese
½ cup soft bread crumbs
    Instructions:
  1. Melt butter
  2. Blend in flour.
  3. Add broth.
  4. Cook and stir until thickened and bubbly.
  5. Remove from heat and stir in vegetables, turkey, and 1/2 cup of the cheese.
  6. Pour into 1 quart casserole dish.
  7. Combine crumbs and remaining cheese and sprinkle over casserole.
  8. Bake at 350 degrees, until heated through about 30 to 35 minutes.
