Fish & Tomatoes

Servings: 4
Ingredients:
1 Tbsp. vegetable oil
1 small onion
1 garlic clove, crushed or 1/8 teaspoon garlic powder
1 can (15 oz.) tomatoes, diced
1 pound fish fillets
- Season with parsley and pepper to taste.
    Instructions:
  1. Heat oil in large skillet.
  2. Saute onion and garlic.
  3. Add tomato with juices, onion, and garlic.
  4. Stir well and cook over medium heat until heated through.
  5. Push tomato mixture to the side and add fish.
  6. Cover fish with tomato mixture.
  7. Cover skillet and cook 10 minutes or until fish is thoroughly cooked.
  8. Season with parsley and pepper to taste.
