Southwestern Salad

Servings: 4
Ingredients:
1 lb. ground beef, extra lean
½ cup onion, chopped
1 Tbsp. chili powder
2 tsp. dry oregano
½ tsp. cumin
1 cup canned kidney beans, drained
1 can (15oz.) chickpeas (garbanzo beans), drained
1 tomato, diced
2 cups lettuce, shredded
½ cup cheddar cheese, low fat
    Instructions:
  1. Brown ground beef and onions in large skillet and drain off fat.
  2. Stir chili powder, oregano, and cumin into beef mixture and cook for 1 minute.
  3. Add beans, chickpeas, and tomatoes and mix gently to combine.
  4. Combine lettuce and cheese in large serving bowl.
  5. Portion lettuce and cheese onto 4 plates.
  6. Add 1 cup of beef mixture on top of each lettuce and cheese plate.
