Tomato Corn Skillet

Servings: 6
1 green pepper
1/2 cup chopped onion
2 Tbsp. vegetable oil
4 fresh tomatoes, peeled, diced or 2 cups canned tomatoes, drained, diced
2 cups corn
1/2 tsp. salt
1 tsp. sugar
Black pepper, to taste
  1. Cook green pepper and onion in oil unti soft.
  2. Add remaining ingredients. Cook until fresh tomatoes are tender, about 10-15 minutes or until heated through for canned tomatoes.
