Mexican Style Bean Pizza

Servings: 6
Ingredients:
1 2/3 cups cooked beans or 1 16-ounce can, drained
1 Tbsp. vegetable oil
1/2 cup chopped onion
1 can (8oz.) tomato sauce
1/4 cup diced green chiles (opt.)
1/2 cup ripe olives, sliced or chopped
1/4 tsp. ground cumin
- Nonstick cooking spray
6 10in. whole wheat tortillas
8 oz. shredded cheese,skim, divide in half
1/2 green pepper, thinly sliced
    Instructions:
  1. Preheat oven to 425 degrees.
  2. Reserve 1/2 cup whole beans; mash remaining beans with fork.
  3. Cook onions in oil until tender.
  4. Add mashed beans, tomato sauce, chiles, olives and cumin.
  5. Cook and stir 5 minutes.
  6. Spray baking sheet with nonstick cooking spray.
  7. Place tortillas on baking sheet.
  8. Spread hot bean and tomato sauce mixture on tortillas.
  9. Layer with cheese, green pepper, reserved whole beans and remaining cheese on top.
  10. Bake 10 minutes.
