Shepherd's Pie

Servings: 4
Ingredients:
3 small potatoes
1 Tbsp. butter
3 Tbsp. skim milk
1 can (24oz.) beef stew
1 can mixed vegetables, low sodium
½ cup cheese, cheddar
    Instructions:
  1. Peel and quarter potatoes.
  2. Cook covered in boiling water until tender (about 20 minutes).
  3. Drain and mash potatoes.
  4. Add butter and mash potatoes again and gradually add enough milk to make potatoes light and fluffy.
  5. Mix canned beef stew and mixed vetetables together and place in a baking pan.
  6. Drop mashed potatoes on top of stew mixture.
  7. Sprinkle with cheese.
  8. Bake at 375 degrees for 25 minutes or until stew is thoroughly heated.
