Shepherd's Pie
Servings: 4
| 3 small potatoes |
| 1 Tbsp. butter |
| 3 Tbsp. skim milk |
| 1 can (24oz.) beef stew |
| 1 can mixed vegetables, low sodium |
| ½ cup cheese, cheddar |
- Instructions:
- Peel and quarter potatoes.
- Cook covered in boiling water until tender (about 20 minutes).
- Drain and mash potatoes.
- Add butter and mash potatoes again and gradually add enough milk to make potatoes light and fluffy.
- Mix canned beef stew and mixed vetetables together and place in a baking pan.
- Drop mashed potatoes on top of stew mixture.
- Sprinkle with cheese.
- Bake at 375 degrees for 25 minutes or until stew is thoroughly heated.
