Lentil Salad

Servings: 6
Ingredients:
½ cup lentils
1½ cup water
2 cups cooked rice
1 med. tomato, chopped
¼ cup finely chopped green pepper
2 Tbsp. chopped celery
1 med. onion, chopped
½ cup fat free Italian salad dressing
¼ cup apple cider vinegar
    Instructions:
  1. Boil the lentils in the water, reduce heat and simmer 20 minutes or until tender.
  2. Drain lentils and let cool.
  3. Combine rest of the ingredients and mix.
  4. Chill to blend flavors. If time permits, allow the lentil salad to marinate overnight in the refrigerator.
