Lentil Salad
Servings: 6
| ½ cup lentils |
| 1½ cup water |
| 2 cups cooked rice |
| 1 med. tomato, chopped |
| ¼ cup finely chopped green pepper |
| 2 Tbsp. chopped celery |
| 1 med. onion, chopped |
| ½ cup fat free Italian salad dressing |
| ¼ cup apple cider vinegar |
- Instructions:
- Boil the lentils in the water, reduce heat and simmer 20 minutes or until tender.
- Drain lentils and let cool.
- Combine rest of the ingredients and mix.
- Chill to blend flavors. If time permits, allow the lentil salad to marinate overnight in the refrigerator.
