Cajun Fried Rice
Servings: 8
| 2 cups uncooked long grain rice |
| 3 Tbsps. vegetable oil |
| 1 med. green pepper, diced |
| 1 small onion, chopped |
| 1 celery stalk, thinly sliced |
| 2¼ cups water |
| 1 can (14.5oz.) chicken broth, low sodium optional |
| 1 med. tomato, diced |
| 1½ tsp. salt, optional |
| ½-1 tsp. ground cumin |
| ¼ tsp. pepper |
| 1 cup cooked pork, cubed |
- Instructions:
- In a large skillet, saute rice in oil until lightly browned.
- Add green pepper, onion, celery; saute for 2-3 minutes.
- Stir in water, broth, tomato, salt if desired, cumin and pepper.
- Bring to a boil.
- Reduce heat; cover and simmer for 18 - 20 minutes or until rice is tender. Stir in pork; heat thoroughly.
