Ham with Apricots

Servings: 6
Ingredients:
1 can (15oz.) apricot halves in light syrup
1½ lbs. ham, sliced
¼ cup packed brown sugar
2 Tbsps. cornstarch
¼ tsp. ground nutmeg
2 Tbsps. vinegar
    Instructions:
  1. Drain apricots, reserving 1 cup syrup.
  2. Cut apricots in half and set aside.
  3. Make small cuts on edges of ham slices and place in a shallow 2-quart microwave-safe dish.
  4. In a small bowl combine brown sugar, cornstarch and nutmeg.
  5. Stir in vinegar and apricot syrup until smooth.
  6. Pour over ham, cover and microwave at 70% power for 5 minutes.
  7. Turn ham and arrange apricots on top
  8. Cover and microwave at 70% power for 8-10 minutes or until sauce is thickened.
  9. Let stand 2 minutes.
