Ham with Apricots
Servings: 6
| 1 can (15oz.) apricot halves in light syrup |
| 1½ lbs. ham, sliced |
| ¼ cup packed brown sugar |
| 2 Tbsps. cornstarch |
| ¼ tsp. ground nutmeg |
| 2 Tbsps. vinegar |
- Instructions:
- Drain apricots, reserving 1 cup syrup.
- Cut apricots in half and set aside.
- Make small cuts on edges of ham slices and place in a shallow 2-quart microwave-safe dish.
- In a small bowl combine brown sugar, cornstarch and nutmeg.
- Stir in vinegar and apricot syrup until smooth.
- Pour over ham, cover and microwave at 70% power for 5 minutes.
- Turn ham and arrange apricots on top
- Cover and microwave at 70% power for 8-10 minutes or until sauce is thickened.
- Let stand 2 minutes.
