Salad in a Pocket
Servings: 12
| 6-8 carrots, grated (3 cups) |
| 2 stalks celery, chopped |
| 6 medium apples |
| 1½ cups raisins |
| 1/3 cup reduced fat mayonnaise |
| 12 mini pita pockets |
- Instructions:
- Wash all fruits and vegetables.
- Peel and grate carrot and put into mixing bowl.
- Add chopped celery.
- Cut apples into quarters, core, and chop into small pieces and put into mixing bowl.
- Add raisins and mix all ingredients.
- Measure mayonnaise and add to bowl and mix all ingredients together.
- Serve in the mini pita pockets.
