Fresh Broccoli Salad

Servings: 8
Ingredients:
1 lb. fresh broccoli
1/3 cup chopped parsley OR celery leaves
1/4 cup oil, low saturated fat
1/4 cup vinegar
1 Tbsp. prepared mustard
1 clove garlic, crushed
1 tsp. salt
1/4 tsp. black pepper
    Instructions:
  1. Wash and trim broccoli and cut into small pieces.
  2. Prepare a dressing by stirring together all remaining ingredients.
  3. Pour over prepared broccoli and refrigerate for at least one hour.
  4. Stir broccoli and dressing two to three times while chilling.
