Date Muffins

| 1¾ cups flour |
| 2 Tbsps. sugar |
| 2½ tsp. baking powder |
| 1/2 tsp. salt |
| 1 egg,beaten |
| 3/4 cup skim milk |
| 1/3 cup cooking oil |
| 1/2 cup chopped dates |
- Instructions:
- Preheat oven to 400 degrees.
- Grease muffin pan.
- Combine flour, sugar, baking powder and salt.
- Combine egg and milk and add to dry ingredients.
- Add oil and mix until moist.
- Stir in chopped dates.
- Fill muffin cups about two-thirds full.
- Bake for 25 minutes or until golden brown.
