Date Muffins

Servings: 12
Ingredients:
1¾ cups flour
2 Tbsps. sugar
2½ tsp. baking powder
1/2 tsp. salt
1 egg,beaten
3/4 cup skim milk
1/3 cup cooking oil
1/2 cup chopped dates
    Instructions:
  1. Preheat oven to 400 degrees.
  2. Grease muffin pan.
  3. Combine flour, sugar, baking powder and salt.
  4. Combine egg and milk and add to dry ingredients.
  5. Add oil and mix until moist.
  6. Stir in chopped dates.
  7. Fill muffin cups about two-thirds full.
  8. Bake for 25 minutes or until golden brown.
