Fruit & Turkey Salad
Servings: 4
| 1/3 cup fat free mayonnaise |
| 2 tsp. lemon juice |
| 1/8 tsp. curry powder (optional) |
| 1 cup cooked turkey or chicken, cubed |
| 1 can (11 oz.) mandarin oranges, drained |
| 1 can (8 oz.) pineapple chunks, drained |
| 1/4 cup flaked coconut |
| 1/4 cup chopped nuts |
- Instructions:
- In a medium bowl, mix mayonnaise, lemon juice and curry powder. Stir in coconut and nuts.
- Add turkey, mandarin oranges and pineapple. Stir gently.
- Refrigerate for several hours.
- Serve on lettuce, crackers, or as a sandwich filling.
