Fruit & Turkey Salad

Servings: 4
Ingredients:
1/3 cup fat free mayonnaise
2 tsp. lemon juice
1/8 tsp. curry powder (optional)
1 cup cooked turkey or chicken, cubed
1 can (11 oz.) mandarin oranges, drained
1 can (8 oz.) pineapple chunks, drained
1/4 cup flaked coconut
1/4 cup chopped nuts
    Instructions:
  1. In a medium bowl, mix mayonnaise, lemon juice and curry powder. Stir in coconut and nuts.
  2. Add turkey, mandarin oranges and pineapple. Stir gently.
  3. Refrigerate for several hours.
  4. Serve on lettuce, crackers, or as a sandwich filling.
