Oven Oatmeal

Oven Oatmeal - serves 8

Ingredients: 2 cups uncooked oatmeal (old-fashioned or quick cooking oats); 1/2 cup brown sugar, packed; 1/3 cup dried fruit (raisins, cranberries, cherries or others); 1/4 cups nuts, chopped; 1 teaspoon baking powder; 1-1/2 cups low fat milk; 1/2 cup applesauce; 2 tablespoons oil; 1 egg

Instructions: 1) Preheat oven to 375 degree F. Spray an 8-inch square baking pan with non-stick spray. 2) In a bowl combine oatmeal, brown sugar, dried fruit, nuts and baking powder. In a separate bowl combine the milk, applesauce, oil and egg. 3) Add liquid ingredients to the dry ingredients, mix thoroughly. Pour into prepared pan. 4) Bake for 20 minutes or until golden brown on top and set. Serve warm or cold. Refrigerate leftovers, use within 4 days.
