Phyllis Herring received her bachelor's degree in Home Economics Education from Eastern Illinois University, and her master's degree in Human Resources and Family and Consumer Sciences from the University of Nebraska. She has been employed by University of Illinois Extension for over twenty years. During that time she has worked primarily in the SNAP-Ed and EFNEP programs in a variety of positions. For the past three and a half years she has served as a Regional SNAP-Ed educator in a twenty-six county area in the eastern part of Illinois providing training and support for SNAP-Ed paraprofessional staff. She is currently working on developing training materials and tools for the new SNAP-Ed paraprofessional staff in Illinois.
Professional organizations include Illinois and National Extension Association for Family and Consumer Sciences (IEAFCS & NEAFCS), Epsilon Sigma Phi fraternal organization for Extension professionals and the Society for Nutrition Education and Behavior. She has also won several awards including the Distinguised Service Award from the National Extension Association of Family and Consumer Sciences.
