1 can (16 ounces) black beans, rinsed and drained
1 can (16 ouncse ) mandarin oranges in light syrup/juice, drained
2 cups cooked rice
3 Tbsp. nonfat Italian salad dressing
    Instructions
  1. Combine all ingredients.
  2. Refrigerate to chill well.
  3. Serve over lettuce.

1. Use brown rice for added fiber!
