Pea Salad

1 1/2 cup fresh or canned peas or 10-oz. package frozen peas
1/4 cup vegetable oil
1 1/2 Tbsp. vinegar
1 Tbsp. onion, chopped
1 Tbsp. sweet pickles, finely chopped
1 Tbsp. pimentos, finely chopped
1/2 tsp. salt
1/4 tsp. black pepper
  1. In a medium-saucepan, add fresh peas and enough water to cover peas. Bring to a boil and cook peas about 6 minutes or until tender. Drain well. Immediately add cold water to cool down peas, drain.
  2. Note: Canned peas- drain, do not cook. Frozen peas- thaw and drain, do not cook.
  3. Mix remaining ingredients in a bowl. Pour over peas and gently mix.
  4. Refrigerate peas for at least 2 hours before serving.
