1/2 cup onion, chopped
1 Tbsp. cooking oil
Dash pepper
1 can (15 ounces) cut green beans, drained
1 can (10.25 ounces) condensed tomato soup
2 cups chopped canned meat
1 egg, beaten
2 cups prepared mashed potatoes
1/2 cup shredded low-fat cheddar cheese
  1. Preheat oven to 350 degrees F.
  2. In a large skillet, cook onion over medium heat in oil until tender.
  3. Add pepper, drained green beans, tomato soup, and chopped meat to skillet. Mix gently.
  4. Pour contents of skillet into a greased 8x8 inch casserole dish.
  5. Combine egg and potatoes in a medium mixing bowl.
  6. Spoon potato and egg mixture over the ingredients in the casserole dish.
  7. Sprinkle casserole with cheese.
  8. Bake for 25-30 minutes.
