Ingredients
1 can (15 ounces.) pinto beans, drained and rinsed
ΒΌ cup taco sauce
1 tsp. chili powder (if desired)
1 cup shredded, reduced-fat monterey jack or cheddar
 Optional: shredded lettuce, chopped tomatoes, sliced green onions
    Instructions
  1. Mash the beans in the bowl.
  2. Add the taco sauce and chili powder to the beans and mix well.
  3. Spread bean mixture evenly on a plate, and sprinkle shredded cheese over the beans.
  4. Top with lettuce, tomatoes, and green onions, if desired.
  5. Serve with low-fat crackers, tortilla chips, or raw vegetable sticks.
