Tuna Loaf

1 can (12 ounces) tuna in water, drained and keep liquid
1 egg
2/3 cup nonfat milk
1/2 cup cracker crumbs
1 Tbsp. lemon juice
1 Tbsp. prepared mustard
1 tsp. dried parsley
 Salt & pepper, to taste
  1. Preheat oven to 350 degrees F.
  2. Mix tuna with egg in medium-sized mixing bowl.
  3. Add enough milk to reserved tuna liquid to measure a total of 3/4 cup liquid.
  4. Stir milk & tuna liquid mixture and remaining ingredients into tuna & egg mixture.
  5. Spoon lightly into greased loaf pan.
  6. Bake uncovered in oven until done, about 45 minutes.
