1 Tbsp. vegetable oil
3/4 cup onion, chopped
1/2 cup celery, chopped
3 cups cooked dried beans (red, kidney, pinto, navy) or 30 oz. canned beans
2 bay leaves
1 cup corn
1/4 tsp. garlic powder
1/2 Tbsp. dried parsley flakes
1 tsp. dried thyme
 Salt and pepper, to taste
  1. Heat cooking oil in a skillet.
  2. Sauté onions and celery in the oil until tender.
  3. Add beans, bay leaves, corn, garlic, parsley, and thyme.
  4. Simmer, uncovered, for 20 minutes. Remove bay leaves.
  5. Add salt and pepper to taste.
  6. Serve alone or over brown rice.
