Banana Wheat Quick Bread

2/3 cups sugar
3 medium ripe bananas, mashed
1/4 cup butter, softened
1 Tbsp. orange juice
1 egg
1 1/4 cups all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1/4 cup raisins
  1. Preheat oven to 325 degrees F.
  2. Grease and flour bottom of 9-inch loaf pan.
  3. In a large bowl, blend sugar, bananas, butter, orange juice, and egg together. Beat 1 minute at medium speed with a hand or stand mixer.
  4. Stir in remaining ingredients.
  5. Pour batter into greased loaf pan.
  6. Bake for 60-70 minutes or until toothpick inserted into center comes out clean.
  7. Immediately remove bread from pan. Cool before serving.

- To remove bread from hot loaf pan, turn pan upside down over a clean plate. Use oven mitts to hold pan. If bread will not loosen, use a small knife to help remove from pan.
