Baked French Toast

8 slices bread
5 eggs
1½ cups low fat milk
¼ cup sugar
½ tsp. vanilla
  1. Lightly grease a 13 x 9-inch baking pan. Cut each slice of bread into even strips and arrange in pan.
  2. In large bowl, mix eggs, milk, sugar, and vanilla until well blended.
  3. Pour egg mixture over bread strips; cover and chill 4-24 hours.
  4. Preheat oven to 425 degrees F.
  5. Bake until eggs are set and toast is lightly browned, around 30 to 40 minutes.
  6. Sprinkle with cinnamon and sugar.

1. Use whole-grain bread for more flavor and fiber!

2. For toppings, include fresh berries or applesauce instead of syrup for sweetness without extra sugar.
