Cactus Salad

4 cups cabbage, chopped into fine strips
2 fresh cactus pads, ~1 cup, cleaned and finely chopped
4 thin strips of white onion
4 radishes, chopped into thin slices
1 large tomato, chopped
1 serrano pepper, seeds removed and finely chopped
1/4 cup fresh cilantro, chopped
2 Tbsp. apple cider vinegar
1 Tbsp. olive oil
 Black pepper, to taste (for salad dressing)
  1. Mix the cabbage, cactus, onion, radishes, tomato, cilantro and serrano pepper in a large bowl. Serve the salad on 4 plates.
  2. Mix the vinegar, olive oil, and black pepper. Add to salad.

1. To clean cactus pads: Wear heavy gloves and lay pad down on flat surface. Trim of edge with knife. Use vegetable peeler to remove prickly spines. Rinse and scrub with vegetable brush.
