Hearty Chicken & Broccoli One Pot Meal

3 cups cooked brown rice*
1 pound cooked boneless chicken thighs, cut into bite-sized pieces
1 bag (16 oz) frozen broccoli
1 can (10 3/4 oz) cream of mushroom soup (low fat)
1 tsp. dry basil (or 1 Tbsp. fresh basil, minced)
1/2 cup carrots, shredded
1  can (8 oz) mushrooms, stems and pieces, drained
 Black pepper, to taste
  1. Add all ingredients together in a large pot.
  2. Cook for 15-20 minutes on low to medium heat, stirring occasionally, until casserole is hot.

* To get 3 cups cooked rice, prepare 1.5 dry rice per package instructions.
