Peach Sauce

1/2 cup water
1/2 cup sugar
1-2 Tbsp. cornstarch (more if thicker sauce is desired)
4 medium peaches, peeled and diced OR 3 cups canned peaches, drained and diced
1/2 tsp. ground cinnamon, allspice or nutmeg (optional)
  1. In a saucepan, combine water, sugar, and cornstarch. Bring mixture to a boil over medium heat, stirring until it thickens.
  2. Add peaches and bring back to a boil. Turn heat down to simmer for 2 minutes.
  3. Remove from heat and stir in spice, if using.
  4. Serve warm over cooked pork, ice cream, pancakes, waffles, or unfrosted cake.
