Blueberry Pancakes

1¼ cup sifted flour
1 Tbsp. baking powder
1 Tbsp. sugar
1 cup nonfat milk
1 egg, beaten
2 tsp. butter, melted
¾ cup frozen blueberries, thawed
  1. Mix flour, baking powder, and sugar together in medium bowl.
  2. In a separate bowl, combine milk, egg, melted butter, and blueberries; add to dry ingredients stirring until just moistened.
  3. Cook pancakes on hot greased griddle/skillet.
  4. When pancakes are bubbly and underside is beginning to brown, flip pancake over.
  5. Cook until both sides of pancake are golden brown.

1. Fresh blueberries also work great in this recipe!
