Baked Potato with Cheesy Vegetables

2 cups broccoli, chopped
1 cup onion, chopped
1 cup carrots, finely chopped
2 Tbsp. butter
1 Tbsp. flour
1½ cups 2% milk
1 cup shredded cheese
8 medium  baked potatoes
  1. Cook broccoli, onions, and carrots with a small amount of water in a saucepan until tender.
  2. In a separate saucepan, melt butter and stir in flour.
  3. Add milk slowly while stirring.
  4. Cook until sauce thickens.
  5. Add cheese and stir until melted.
  6. Add vegetables to cheese mixture, stir to combine.
  7. Serve over hot baked potatoes.
