1 pint fresh strawberries, diced
4 small tomatoes, seeds removed, chopped
1 small onion, diced
½ cup chopped fresh cilantro/parsley or 2 T. dried cilantro/parsley
1-2   jalapenos, minced (opt.)
½   lime, juiced
2 garlic cloves, minced or 1/4 teaspoon garlic powder
1 Tbsp. vegetable oil
2 Tbsp. orange juice (optional)
  1. Combine strawberries, tomatoes, onion, cilantro/parsley and jalapenos in medium bowl.
  2. Stir together lime juice, garlic, oil and orange juice in a small bowl.
  3. Add to lime juice mixture to strawberry mixture. Stir to combine.
  4. Cover and refrigerate for several hours or overnight before serving.
  5. Serve with poultry, pork or fish.
