Breakfast Casserole

Ingredients
10 slices bread, cubed
½ lb. bulk pork sausage, cooked, drained, and crumbled
½ cup shredded low-fat Cheddar cheese
½ cup shredded low-fat Swiss cheese
½ cup canned mushrooms, drained
6 eggs, beaten
2 cups nonfat milk
 Salt and pepper, to taste
    Instructions
  1. Spray a 9-inch x 13-inch pan with non-stick cooking spray.
  2. Arrange layers of bread, sausage, cheese, and mushrooms in pan.
  3. Combine eggs and milk and pour over top.
  4. Refrigerate 8 hours or overnight.
  5. Preheat oven to 350 degrees F.
  6. To bake, cover with foil and bake for 45 minutes.
Tips

1. Other vegetables work great in place of mushrooms - try green onions, tomatoes, or zucchini!

2. For a lower-fat treat that still tastes great, use turkey or chicken sausage instead of pork.
