1 large package instant vanilla pudding mix
1 can (12 ounces) evaporated milk
1 can (15 ounces) pumpkin puree
½ tsp. pumpkin pie spice or ground cinnamon
½ tsp. vanilla extract
 Non-dairy whipped topping
  1. Prepare pudding according to package directions, except substitute evaporated milk for regular milk.
  2. Chill the pudding until it thickens, about 10-15 minutes.
  3. Add pumpkin, spices, and vanilla to the pudding and mix thoroughly.
  4. Chill before serving.
  5. Top with non-dairy whipped topping just before serving.
