Ingredients
½ cup lentils
1½ cup water
2 cups cooked rice
1 medium tomato, chopped
¼ cup green pepper, finely chopped
2 Tbsp. celery, chopped
1 medium onion, chopped
½ cup fat free Italian salad dressing
¼ cup apple cider vinegar
    Instructions
  1. Boil the lentils in water, reduce heat and simmer 20 minutes or until tender.
  2. Drain lentils and let cool.
  3. Combine rest of the ingredients and mix. Add cooled lentils.
  4. Chill to blend flavors. If time permits, allow the lentil salad to marinate overnight in the refrigerator.
