1 lb. dry red beans, soaked overnight and drained
6 cups water
1½ cups onion, chopped
1 cup celery, chopped
4 bay leaves
1 cup green bell pepper, chopped
3 Tbsp. garlic, chopped
3 Tbsp. parsley, chopped
2 tsp. dried thyme, crushed
1 tsp. salt
1 tsp. black pepper
4 cups cooked brown rice
  1. In a 5-quart pot, combine soaked beans, water, onion, celery, and bay leaves. Bring to a boil and then reduce heat.
  2. Cover and cook over low heat for about 1 hour. Remove bay leaves.
  3. Add green pepper, garlic, parsley, thyme, salt, and black pepper.
  4. Cook over low heat until liquid is thick, about 1-1 1/2 hours.
  5. Serve over hot, cooked brown rice.
