Ingredients
10 Tbsp. butter
3/4 cup sugar
3 eggs
1 3/4 cups flour, sifted
2 tsp. baking powder
1 Tbsp. lemon rind, grated
2 medium apples*, pared, cored, and sliced
2 tsp. sugar
1/2 cup apricot jam
    Instructions
  1. Preheat oven to 350 degrees F.
  2. Beat butter with sugar until creamy.
  3. Add eggs one at a time, beating until well-blended.
  4. Add flour, baking powder, and lemon rind, beat 4 minutes.
  5. Pour into a greased 9-inch spring form pan.
  6. Arrange the apples on the batter, sprinkle all with 2 tsp. sugar.
  7. Bake 1 hour in oven.
  8. Remove from pan, brush apples with jam, and let cool.
Tips

 *For best results use a baking variety of apple like McIntosh, Granny Smith, Jonagold, or Braeburn
