1 medium onion, chopped
1 Tbsp. vegetable oil
1 tsp. garlic powder
2 cup chicken broth, reduced sodium
2 cup cooked chicken, chopped
2 cup canned diced tomatoes with juice
2 cup canned lima beans, drained
2 cup corn, canned or frozen
2 medium potatoes, cubed
 Black pepper, to taste
  1. In a large pan, saute onion in vegetable oil until soft.
  2. Add garlic powder, chicken broth, chicken, tomatoes, lima beans, corn, and potatoes to pan.
  3. Bring contents of pan to a simmer and cook until potatoes are done.
  4. Add black pepper to stew, to taste.
