Squash with Ham and Apples

3 acorn squash or 1 large butternut squash
2 cup cooked ham, diced
2 small tart apples (such as Granny Smith), unpeeled, cored, and diced
1/2 cup brown sugar
1 Tbsp. prepared or 1/2 tsp. dry mustard
1/4 tsp. black pepper, optional
2 tsp. butter
  1. Preheat oven to 350 degrees F.
  2. Wash, cut lengthwise, and remove seeds from squash. Place on a baking pan cut side down.
  3. Add 1-inch water to pan. Bake squash about 1 hour or until tender when tested with fork. Remove from oven and turn squash cut side up.
  4. Combine ham, apples, brown sugar, mustard, and pepper in a bowl. Spoon mixture into squash cavities. Top with butter.
  5. Return stuffed squash to oven and bake until apples are tender, about 30-45 minutes.
