Baked Chicken Nuggets

1½ lbs. chicken thighs
1 cup cornflakes cereal
1 tsp. paprika
½ tsp. Italian herb seasoning
¼ tsp. garlic powder
¼ tsp. onion powder
  1. Preheat oven to 400 degrees F.
  2. Remove skin and bone from chicken thighs. Cut thighs into bite-sized pieces.
  3. Place cornflakes in plastic bag and crush by using a rolling pin.
  4. Add seasonings to crushed cornflakes.
  5. Close bag tightly and shake until blended.
  6. Add a few chicken pieces at a time to the cornflake mixture.
  7. Shake to coat evenly.
  8. Lightly grease a cookie sheet.
  9. Place chicken pieces on the cookie sheet so they are not touching.
  10. Bake until golden brown and chicken is cooked through, about 12-14 minutes.

1. You can also use boneless, skinless chicken thighs or breasts for the nuggets.
