Apricot Oatmeal Squares

1 cup butter
¾ cup brown sugar
¾ cup sugar
2 eggs
2 tsp. vanilla
1½ cup flour
1 tsp. salt
1 tsp. baking soda
3 cups quick-cooking oats
1 can (15 ounces) apricots, diced, in juice
 Optional: 1 cup chocolate chips, 1/2 cup chopped walnuts, or 1/2 cup shaved coconut
  1. Preheat oven to 375 degrees F. Grease 9 inch by 13 inch baking pan.
  2. Melt butter. Add sugars and blend well.
  3. Add eggs and vanilla and blend.
  4. In a separate bowl, combine flour, salt, and baking soda.
  5. Add dry ingredients to the butter, eggs and sugars.
  6. Add oats and blend until combined.
  7. Stir in apricots. Add chocolate chips, walnuts, or coconut, if desired.
  8. Spoon mixture evenly into pan and bake 20-25 minutes until toothpick pulls out clean; do not overcook.
