2 zucchini, quartered, thinly sliced
2 yellow squash (summer squash), quartered, thinly sliced
1 large onion, thinly sliced
1 Tbsp. vegetable oil
1 large tomato, thinly sliced
1/2 cup cheddar cheese, shredded
  1. In a large skillet, saute zucchini, yellow squash, and onions in vegetable oil until slightly tender.
  2. Place sliced tomatoes over vegetables in skillet.
  3. Cover, reduce heat, and simmer until tomatoes are heated thoroughly.
  4. Sprinkle cheese over tomatoes. Turn off heat.
  5. Cover skillet until cheese is melted, about 2-3 minutes. Serve immediately.
