Hearty Mexican Soup

1 small onion, chopped
4 cloves garlic, minced
1 can (15 oz) tomatoes, diced, drained and rinsed
2 cans (15 oz/each) black beans, drained and rinsed
2 large potatoes, peeled and diced
4 cups water
1 Tbsp. lime juice
1 tsp. cumin
1/2 cup fresh cilantro, chopped
  1. Use nonstick cooking spray to coat the bottom of large pan. Sauté onion and garlic over medium heat until onion is tender.
  2. Add tomatoes, black beans, potatoes, and water. Bring to a boil, then reduce to low-medium heat. Cover and simmer for 15-20 minutes.
  3. Add cumin and lime juice, stir and simmer for 10 additional minutes.
  4. Add cilantro and serve.
