Peanut Butter Soup

1 whole chicken (cut up)
2 medium onions, chopped
1½ cups green pepper, chopped
2 small tomatoes, chopped
4 whole carrots, sliced
 Water to cover chicken
¾ cup smooth peanut butter
1¾ cup water
1 Tbsp. red pepper
1 can (6 ounces) tomato paste
  1. Place cut up chicken in a pot with onion, green peppers, tomatoes, carrots, and enough water to cover chicken.
  2. Bring slowly to a boil. Reduce heat and simmer for about 50 minutes.
  3. In a separate large pot, combine peanut butter and water and cook over medium heat, stirring until peanut butter is melted.
  4. If peanut butter gets too thick, add more water.
  5. Add crushed red pepper and tomato paste to peanut butter mixture.
  6. Add the peanut butter mixture to chicken pot.
  7. Stir, cover and let simmer 20 minutes or until chicken is done.
  8. Serve over rice.

1. If you do not have a whole chicken, use 4-5 large boneless, skinless chicken breasts instead.
