½ head Romaine lettuce, torn into pieces
½ head red cabbage, chopped
2 medium carrots, peeled and sliced
1 cucumber, peeled and sliced
1 green bell pepper, cut into strips
2 heads broccoli, cut into florets
3 medium tomatoes, cut into wedges
2 cans (15 oz.) kidney or garbanzo beans, drained and rinsed
6 oz. shredded low-fat cheddar cheese
¼  cup nonfat salad dressing
  1. Wash and prepare all vegetables as noted above.
  2. In a large bowl, combine all prepared vegetables, beans, and cheese.
  3. Add salad dressing and toss together lightly before serving.
